One of the best things about winter is the food. Nothing says winter like something cooking in the crock pot. I usually use the crock pot for things like roast or chicken wings, but lately I’ve been craving soup. I guess that’s what happens when it just keeps snowing.
I had been craving broccoli cheddar soup, but also really wanted potato soup, so I decided to combine the two in this one incredible recipe for loaded baked potato soup. The combination of broccoli and potatoes with heavy whipping cream and chicken broth creates an almost chowder-like soup that is the ultimate comfort food for any snowy day. And to make it even better, top it off with some cheese, bacon, and green onions to make the ultimate loaded baked potato soup.
Loaded Baked Potato Soup

Ingredients
- 6 cups chicken broth
- 1 bag frozen broccoli
- 16 ounces Heavy Whipping Cream
- 5 pounds potatoes
- 2 tbsp Minced Garlic
- 1 cup cheddar jack cheese optional topping
- 1 cup bacon bits optional topping
- 1 cup chopped green onion optional topping
- 1 cup croutons optional topping
Instructions
- Combine potatoes, chicken broth, minced garlic, broccoli, and heavy whipping cream in crock pot and cook on high for 4 hours or low for 8 hours.
- Blend soup with an immersion blender.
- Serve with desired toppings.
