Last weekend I bought some green bananas and I figured I’d have enough time for them to ripen so I could actually eat them all. Somehow though, it didn’t work out the way I planned and I swear they went from green to brown overnight! I saw that as an opportunity though to make something that I’ve been dreaming about for a while. Peanut Butter Chocolate Chip Banana Bread. Just seeing those words together makes me drool! So, as soon as I woke up this morning I went straight to the kitchen and starting throwing things together and I have to say, I’m insanely pleased with this recipe. I’d say the hubs is quite pleased too since he’s had half the loaf so far!

A rich and decadent dessert bread using three of your favorite foods: peanut butter, chocolate chips, and bananas. When you bake this, your kitchen will smell amazing and all will come running to enjoy before it's even out of the oven!

- 2 overripe bananas
- 1 egg
- 1 cup peanut butter
- 1 cup brown sugar
- 1 1/2 cup flour
- 1 tsp cinnamon
- 1 tsp vanilla
- 1 tsp baking soda
- 1/4 cup vegetable oil
- 1/2 bag semi-sweet chocolate chips
- 1. Pre-heat oven to 350°. I used the convection setting on my oven.
- 2. Grease loaf pan.
- 3. Place 2 overripe bananas into mixing bowl and mash with a fork.
- 4. Place remaining ingredients into mixing bowl and mix together using hand or stand mixer.
- 5. Pour mix into greased loaf pan.
- 6. Bake at 350° for 50 minutes.
- 7. Remove bread from loaf pan and let sit for approximately 30 minutes to cool.
- 8. Slice in 10-12 pieces and enjoy!
