A few years ago I went to a work dinner at a fancy italian restaurant and had one of the most amazing pasta dishes I’ve ever had. It was a creamy tortellini with vegetables and pancetta with just a light garlic seasoning. Clearly it made an impression on me since I can still remember it so many years later, so I decided to make my own version of this dish and am so pleased with how it turned out! And the best part – it’s super simple and uses ingredients you can easily find at the grocery store!
