Put the pork in the crock pot the night before you are planning to make the nachos and cook it on slow overnight.
In the morning, remove the fat cap from the pork in the crockpot, and add half of the bottle of BBQ sauce to the crockpot and shred pork.

Recipe Notes
My all-time favorite recipe for white queso is from The Baking Fairy and can be found here. Of course there is no shame in buying queso already made – I do that far more than I make it!
My go-to method for guacamole is a combo of pre-made and fresh. What do I mean by that exactly? I mean I use an incredible mix and combine with two fresh avocados. It’s super easy and delivers a fresh tasting guacamole without the hassle. My favorite mix that I use is Frontera Guacamole Mix. If you haven’t tried it, trust me, you should! You won’t regret it!
For a super easy cleanup, be sure to use Reynolds Slow Cooker Liners. I thought I’d be able to clean up easily this time without them – WRONG! I totally regret not using them today, but will for sure have more on hand for the next time I use my crock pot.
